Gajar ka Halwa ( Carrot Halwa)

The first time I made carrot halwa was on a diwali morning at 4 am!!!! I will never forget that!! I am not a morning person at all, so it really did surprise me when i decided to make carrot halwa ( for the first time in my life), so early in the morning. It was the time when I was staying in Chennai with my roomie, Ruby. We had a huge 3 bedroom house and a well stocked kitchen!!! We used to have a blast with weekend marathon of FRIENDS…ohhh i sooo miss those times…

ohh..yes…about carrot halwa..ooops sorry!! if left to myself, i can go on and on about those wonderful days in Chennai :)

All my colleagues were busy helping their moms or mom in laws in preparing Diwali goodies….i didnt want to miss out on all that fun just because i was not gonna go home for that diwali. I called up my chithi ( aunt) and got the recipe for carrot halwa…i was planning to make it on diwali day but not so early in the morning!! but i was woken up by all the crackers and the fireworks and decided to make use of waking up early in the morning!! :)

The second time i made carrot halwa is now, when i came to know that one of our friends here, also a neighbour, was pregnant with their first baby!! AJ and i were soo happy for them and i wanted to make something special, something sweet for them…thats how i remembered about carrot halwa :) AJ helped me with all the stirring…thanks honey!! :)

3 cups – grated carrots
2 cups – sugar4 -41/2 cups milk ( i used reduced fat milk, if you are using whole milk, then the measure is 4 cups milk and 1/2 cup water and use the water to cook the carrots initially)
1 tbsp ghee ( clarified butter)
1 tsp cardamom powder
a few almond slices for garnish

Bring a cup of milk to boil, in a heavy bottomed pan and add the grated carrots to it. After 7 – 10 mins, add the remaining milk and cook on medium flame for about an hour stirring at regular intervals.

Add the sugar and keep cooking for about 15 mins more till the halwa thickens. Add the ghee and cardamom powder for the flavour and garnish with the almond slices!!

I dont make carrot halwa here bcos we dont get those red caroots like the ones we get in winter in India. But do love it. Looks great.

thanks Vimmi…these are pretty good with any kind of carrots, if you are particular about the colour, you can use food colouring..

This looks so delicious. I am not sure what a halwa is but I know that we (in Greece) have this name for a sweet which is made with semolina. I wonder if they have any connection?

Ivy, even we have semolina halwa in our cuisine..we even use vermicelli sometimes..could you send me the recipe of that..want to know whether its the same thing!!:)

If you could squeeze that into the center of gulab jamuns, I’ll take a dozen please! Like jelly-filled donuts, but MUCH better!
