Udon Noodle Stir Fry and Hot Vegetable Curry with Spiced Noodles!

Yesterday we went to the VegFest in the Seattle Center and eventhough I had fun sampling all the food there, it was not really upto my expectations. Maybe my expectations were a tad too high! I think I enjoyed the Restaurant After Hours event conducted by the Greater Seattle Chamber of Commerce sometime in Feb, even better than this, inspite of the flu and the fact that most signature dishes served were non-vegetarian and I kept asking my husband how it tasted! :D Well, you really can’t compare the two but i just couldnt help doing it. What i was looking forward to at the VegFest was the cooking demo by Janine Doran ( the executive chef at Cafe Flora) but was sadly disappointed when someone else was substituting for her and even more disappointed when the demo was for Saag Paneer!! Well, the good part was that I managed to collect a couple of recipes from some stalls and we got to taste some really good food samples. The one that I fell for was the Organic Artisan Tofu by Small Planet which came in many stunning flavours like Garlic and Herb, Spicy Tofu, Curry Tofu and Sun-Dried Tomato Tofu. (You get them at Whole Foods, it seems, I didnt know about this earlier and now that Ive tasted it, Im soo gonna buy it! ) We also got to taste some of the veggie burgers by Morning Star, I have always bought only the veggie masala burgers and have never tried any of the others before, now i have some more that both of us liked! I did not even go near the cookbooks section as I was afraid that I might just buy a couple of them. I just bought two from Borders on Saturday and now that I have accumulated so many of them, they are hardly fitting in the small bookshelf that is there!

Coming back to the Asian fare of Udon Noddle Stir Fry and Hot Vegetable Curry with Spiced Noodles, last week I made asian food for atleast 3 nights and it is there in my menu for this week as well! Both AJ and I are generally fans of Asian food, but i think its really some phase now that we are eating soo much of it! :)
Udon Noodle Stir Fry
Adapted from “Vegetarian Tasty Recipes for EveryDay”
Udon noodles is a traditional Japanese noodles and this stir-fry required Japanese Soy Sauce and Mirin ( a kind of rice wine similar to Sake). Since I did not have any of these, I just used the regular soy sauce and substituted Mirin with rice wine vinegar. So, with all these substitutions, I am not sure how Japanese, this recipe is!
1 packet Udon noodles
4 spring onions, cut into short lengths
4 cloves garlic, minced
1 tbsp minced ginger
2 heads, bok choy leaves
a handful of snow peas
2 tbsp soy sauce
1 tbsp rice wine vinegar
1/2 tbsp vegetable oil
1/2 tbsp chilli oil
1 tsp hot chilli sauce
1 tbsp teriyaki sauce (i just added this as a last moment addition, as i like the taste of it)
Bring a saucepan of water to boil and add the noodles to it. Cook for 5 minutes until tender. Drain in a colander and pour cold water over it to arrest further cooking.
Meanwhile, in a wok, heat the vegetable oil until hot. Add the spring onions, garlic and ginger and stir fry over high heat for a minute or so. Now add the snow peas and bok choy as well. Toss in the soy sauce, rice wine vinegar, chilli oil, hot sauce and teriyaki sauce and mix them well. Stir fry for 1-2 minutes. Now add the noodles and mix well. Serve hot!

Hot vegetable Curry with Spiced Noodles
Adapted from “Vegetarian Tasty Recipes for EveryDay”
This is an easy to make curry, for those of you who like Thai food!

For the Curry Paste :
4 dried red chillies, chopped
1 stem lemon grass, sliced
1 tbsp chopped ginger
2 garlic cloves, minced
1 small onion, chopped
1 tbsp fresh coriander / cilantro
10 black peppercorns
2 tbsp lime juice
2 tsp vegetable oil
Other Ingredients for the Curry:
2 tbsp vegetable oil
1 can coconut milk
4-5 snake beans, cut into short lenghts
1 zucchini, thickly sliced
1 eggplant, cubed
3-4 kaffir lime leaves
2 tbsp lime juice
1/3 cup chopped fresh coriander
1/3 cup chopped fresh basil
salt to taste
For the Spiced Noodles:
2 tbsp oil
1 small onion, chopped
1 clove garlic, minced
1 tsp dried chilli flakes
1/2 tsp garam masala
1 packet thin egg noodles
salt to taste
Grind all the ingredients for the curry paste in a blender or food processor to make a smooth paste ( I used yellow onions for this and i feel, they give out a bittery flavour if ground as is, so i always saute them in oil and take them out before they brown and then grind them).
Heat the oil in a pan and saute the curry paste for a while. Add the coconut milk to it and bring to a boil. Reduce heat and add the vegetables, kaffir lime leaves, lime juice and cook covered until the veggies are tender. Add salt to taste and toss in the cilantro and basil leaves as well!
To make the spiced noodles, cook the noodles in boiling water until tender and keep aside. Meanwhile, heat the oil in a wok, Saute the onion and garlic. Add the chilli flakes and garam masala and saute for a couple of minutes.Add the noodles to the onion mixture and toss well. Add salt as required. Serve with the vegetable curry!

Hi,
Manju at a food fest can imagine…how curious,xcited and enthu u wd’ve bn :) no doubt u wd’ve enjoyed ur time there right?!O ya, I agree with u on the food phase thing.. :) my hubby n me went through a’smoothie phase’ very recently ;)

coming to ur recipes, both are so exotic n well presented.Many of the ingredients are hard to find here. So next time u make both of these do think of me! :)

Hey, thanks for adding me at FoodBuzz! The spicy noodles sound great. I never thought of doing that! My husband and I were at the VegFest on Sunday, too. It was our first time. For what it was, it was pretty cool (all we did was go around and eat samples), but I was expecting something more than just samples and a handful of presentations. I’m not sure what I was expecting, though. :-)
