Hunger Challenge Day 4 and Cinnamon Sugar Donut Muffins for Taste & Create

Well, its the first time that I am blogging so continuously and I think I am running out of things to write. So, getting right to my menu for the Day 4 of Hunger Challenge. Yesterday, we did go a little away from our original menu plan. I did not make the stir-fry noodles for lunch, instead had the leftovers from the day before’s dinner and AJ had a sandwich from work. Our total for Day 4 was $13.44 , a little over the daily budget , but we are already well under the weekly budget, so it is ok :).Plus, we have enough leftovers from yesterday’s dinner to be had for tonite’s dinner. So far, we have spent $38.26 out of our budget of $60 for the week and I have more than 20$ to spend for today!! Here is what our menu for yesterday looks like and what it cost us.
Breakfast : Toast and egg for me, cereal and milk for AJ, coffee for me and Orange juice for AJ : $1.26
Lunch : Leftover from Day 3’s dinner for me ( $0) and a sandwich for AJ ($3.80) : $3.80
Evening Coffee: $0.20
Dinner : Multi Grain Spaghettini with Spinach and Garlic Cream Sauce ( with Chicken for AJ) , Beet and Red Onion Salad, Herb Roasted Potatoes : $8.18

Spaghettini with Spinach and Garlic Cream Sauce
Spaghettini – 1 pack
Garlic – 4 cloves
Spinach – 2 cups
Milk – 1 cup
Eggs – 2
Parmesan – 4 tbsp
olive oil – 1 tbsp
Chicken Breast – 1

Beet and Red Onion Salad Beet – 1

Cinnamon Sugar Donut Muffins for Taste & Create
I know, I know…it is not fair to blog about Cinnamon Sugar Donut Muffins in the same post as of Hunger Challenge. But this is something that I have committed a month ago and today is the last day for this. Taste & Create is this wonderful event where, if you register for the month, you are paired with another blogger and each of you have to try out atleast one recipe from each other’s blogs and blog about it.

This is my first time here and I was paired with Marthe of Culinary Delights. And since today was the last day and I was participating in the hunger challenge as well, I could not find anything which i could make with ingredients I already have for the Hunger Challenge and which was within the budget. I liked the honey banana muffins and the cinnamon sugar donut muffins from Marthe’s blog. I decided to make this lovely Cinnamon Sugar Donut Muffins, blog about it today and have them for breakfast tomorrow!!! Believe me, it took all and more of my will power to not pop one of these into my mouth!! :)

Ingredients:
2 cups flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 eggs
1 cup yoghurt
2/3 cup brown sugar
6 tbsp butter
2 tsp Irish Cream Liqueur
For the topping : 3 tbsp butter, 4 tbsp sugar, 1 tsp cinnamon powder
Preheat oven to 400 F and line the muffin tray with paper cups. Mix the flour, baking powder, baking soda, cinnamon and salt in a bowl and keep aside. In a separate bowl, mix in the eggs, yoghurt, brown sugar, butter and the liqueur. Add the dry ingredients to the wet ingredients and give it just a couple of stirs. Do not overmix the batter. Fill the muffin cups and bake till completely done.
Meanwhile prepare the topping, but melting the butter and mixing in the sugar and cinnamon to it. Take the muffins out of the oven and dip the top of each muffin into the topping and keep on a wire rack to cool. Enjoy!! :)
