I don’t remember when I first had Tiramisu, but the first few that I have had were definitely not that impressive that I will remember about them. But I do remember one of the best I have ever had. It was in Fiji, during our honeymoon, at the Hideaway Resort. The Pastry Chef of Hideaway Resort was an award winning chef and it definitely did show in his crème brûlées and tiramisu and chocolate cakes. After coming back to Seattle, Tiramisu was never there in my mind when i thought of desserts, it was cheese cakes or apple pies or ice creams. You won’t believe what I am going to say and I’m sure most of you are going to be like “really??!! good Italian desserts in a grocery store??!! are you crazy??” well, Fred Meyer does have a delicious tasting Tiramisu. Go and try it for yourself if you don’t believe me!
So, now that I have professed my love for the Italian Dessert, let me tell you how the process of making one came into being. For months I have been reading up on a lot of recipes for Tiramisu, even watched a lot of videos on YouTube about making this. Some needed egg yolks, some did not! Some used lady fingers, some used plain sponge cake!!!!! Some had liqueur in it, some did not. Some used espresso, others just plain coffee. So,I kept watching and reading and finally i knew what i wanted in my Tiramisu. Then started the shopping trip. I couldn’t manage to get all that i needed in a single trip. It took me a couple of weeks to finally get hold of all that i needed and finally last Saturday I made Tiramisu and we had that for breakfast on Sunday morning. Yeah, yeah, both AJ and I are sometimes like this, when we just love something, time is never a constraint!
Here is my recipe for a delicious Tiramisu:
| 2 – 3oz packs of Lady Fingers 8 oz Tiramisu Mascarpone 8 oz plain mascarpone cheese 8 oz Extra creamy cool whip 4 oz Lite cool whip ( I just happened to have some lite and extra creamy, you can use either all Lite or all Extra Creamy) 1 1/2 cup water 2 tbsp instant espresso 4 tbsp sugar 2 tbsp Kahlua (coffee flavoured liqueur) cocoa powder for dusting |
Bring the water to a boil and add the espresso, sugar and kahlua to it and keep aside. In a bowl, mix both the mascarpone cheeses and mix in the cool whip as well to it. ( I did the mistake of using an electric beater to mix the cream as one of my cool whip boxes had not defrosted well enough, but it think it kind of loosened the mixture and the cheese part of my tiramisu was a little runny).
Take a rectangular casserole or baker and arrange the lady finger in one single layer after dipping it lightly in the coffee mixture. Using a spoon, pour more coffee mixture on the lady fingers on parts which did not soak it up earlier. Be careful as to not make it very soggy. Now that you have one layer of the ladyfingers, make another equally thick layer of the cream mixture. Repeat the layers again. Make sure to break the ladyfingers and fill them into little gaps, you don’t want the cream to go and fill in that gap! Finish off with a cream layer and dust the top with cocoa powder. Keep it in the refrigerator to set for about 24 hours.
We did not have the patience and took it out in 10 hours or so, and as it is my cream was all runny, so before it set, it was really runny and i was disappointed to see it. But one taste of it and i went crazy!! I am generally too modest to admit any of my culinary conquests but this time I am totally shameless and I am gonna say I would definitely put my tiramisu in the top 5 best that i have tasted!!!
We did keep it till the evening and by evening the tiramisu had set and we had a lovely dessert for dinner. We started and finished the day with homemade Tiramisu, What a day!!!

What a coincidence!! last night I googled some dessert recipes and stumbled upon tiramisu…saw a couple of recipes each one was different from the other(more of a coincidence coz what I thought seeing the recipes is echoed in ur writ up) …was quite confused which one to zero on. I almost gave up on it, and today I see a Tiramisu post here :0 tha’s a blessing right? and coming from u the quality is assured! Shall try it sometime this summer.Will have to hunt for the things required.

This is a favorite dessert of mine! I was so happy to see you use mascarpone cheese… I think I can deal with the other variations, but when I see cream cheese used for this, I cringe! It’s look absolutely mouthwatering and delicious!
