Nigella’s Caramel Croissant Pudding

We had those yummy stuffed croissants for brunch during the weekend and I had some croissants leftover. What do i do with them? What else, other than the yummy caramel croissant pudding of Nigella Lawson!!! I have been eyeing this recipe for months now, yes, you wont believe it, months!! And why did i take so long to make it? i didn’t have croissants, silly!! well, that is a silly excuse, but that’s what it was, i never had any stale croissants and I somehow didn’t want to buy fresh croissants and make them stale just for this. So finally I bought croissants for something else, had leftover stale croissants because of that and here is the pudding!!

I am somehow very fascinated by all of Nigella’s shows. I just love everything she makes, love the English accent and like someone else said very recently, love how the very teeniest of sounds are captured in all these shows – like the chocolate chips falling into the bowl, the oil sizzling n more..I have watched this particular one over and over again that i think i know all the measurements of the ingredients by heart. So, here is a clipping of this video. You don’t exactly need the recipe as it is there in the video, but still I will write down how i used it with the units of measurements that I am now used to.

 

Nigella’s Caramel Croissant Pudding

What I used:

5 –6 small stale croissants
1 1/2 cups superfine (bakers) sugar
5 tbsp water
1 1/2 cups heavy cream
1 1/2 cups whole milk
5 tbsp bourbon ( 5 tbsp was infact a little strong for my taste, so I added a tbsp of vanilla to mask it)
5 eggs, beaten

Tear the croissants, each into 3 pieces or so and place them in a single layer in a baking dish. Put the sugar and water in a saucepan and swirl it around a little to dissolve the sugar a bit. ON medium high heat, place the saucepan and keep swirling to dissolve the sugar. Do not stir! Apparently it crystallizes the sugar and what we need is a smooth caramel and not gritty as if we have added cornmeal to it. The sugar mix will boil a little and then slowly start becoming brown in colour. Keep swirling till the colour becomes “deep amber”. Now reduce the heat to low and add the cream, milk and bourbon and mix well. Take off the heat and add in the eggs, slowly. Mix well and pour this into the baking dish with the croissants. The croissants will float up but just dunk them in a little so that the top part of it gets coated with the mixture. Put the dish in the oven and bake for about 25-28 mins, till the top of the croissants are golden brown and the rest of the pudding bubbles a little.

Now all you need to do is to spoon some on to a plate and enjoy!!!!

hi superchef…., i sat with the video on well, she did it so well, should i say it was as if she was an actress on a show, only thing is i had to believe my self that she really cooked it !!, mm the english she knows how to put the words, where to stress and make it a point i think !, Oh! the croissant thingy is too good too rich.., not for me, well i can make it for my kids !!, lovely, and congrats for ur award, as smitha said Oh! yes, I too feel the same when i read some of the blogs i go through the passion for food,thoughts, impressions and brilliant photography and each of them should be given this award, Some of them with their work & family & children make their time to spend sometime on blogging such beautiful innovative recipes…., I think most of the restaurants would have adapted them too…!!, you deserve the award enjoy it…

Even i love her shows…I love the way she cooks,her accent,kitchen utensils..i completely enjoy her show..even i hv noted down this recipe from her show..but never tried it..It looks yummm..

Wow! This is so much better than bread and butter pudding.

One quick question – do you chill the caramel & cream mixture before adding eggs. Just thought they might curdle a bit if the mixture's too hot.

Oops I do have a doubt too..when adding beaten eggs to hot mixture, doesnt it curdle the eggs? Or does quick whisking while adding eggs save it from curdling?

@Simran and Pooja – Even i had the fear that won’t the egg curdle when i add it to the hot mixture, but it didnt. Just make sure that you take the pan off the stove and then while you keep whisking with one hand add the eggs to it and keep whisking for a couple of secs more. It will not curdle! :)

Hi Manju,
I am awed by Nigella for reasons more than one! She is so so pretty! She can cook up a gorgeous dish with just any thing,she is so carefree and confident while she’s cooking…doesn’t look like she’s doing it consiously for a show :)
Ya ya … and the way she speaks love the accent and her smile!!!! love her midnight snacking ;) hmmm…let me get to the post now.

Nigella is the sexiest cook on TV…I love her style and her voice modulations, have probably seen all her shows…
That pudding looks exactly like the one she made…yummmm…
I too have it bookmarked since a long time, but like you I never have croissants left over…
Have to try it soon..

nigella is gorgeous. i love her face. the pudding looks fabulous. if i buy croissants, i;d probably eat them all and have none left over for this. there’s some widget on your site (or was it the video?) that makes it take a loooong time to load.

Made these for breakfast today for my family. Delish. I slightly adapted the recipe. I tore 4 croissants in smaller pieces, added 2 tbl. or rum, and 1/2 tbl. in cinnamon. Only used 1 cup of heavy cream and 1 cup milk with 4 eggs. I also didn’t wait for the sugar to caramelize. Instead I cooked the sugar for 5 minutes with water and added everything else and made a nice egg cream sauce. Poured it over the croissants and cooked it for 20 minutes at 375. Awesome! TY TY! Already sent a tweet out about your recipe. This is so perfect when I buy bulk croissants.

Used to watch Nigella a lot and do like some of her cooking though I must say I do find a lot of her cooking very rich. I can definitely do without those calories! :D

That aside, your croissant pudding does look good.
